chore: bump versions to 0.8.0

Cut the 0.8.0 release (dependency upgrades + single-instance and
error-handling hardening): daemon Cargo.toml/Cargo.lock to 0.8.0, extension
metadata.json version to 8, and add the [0.8.0] CHANGELOG entry.
